Snail egg as dessert

The snail caviar is invented by a Frenchman, Dominique Pierru.  He had to find a way to “convince” his 180,000 snails to lay a large enough quantity of eggs, then soften and condition them. Snail Caviar is best served on toast or sage leaf, accompanied by a glass of champagne
